**Ingredients:**
- 1 medium-sized raw mango, peeled and chopped
- 4-5 dry red chilies (adjust according to your spice preference)
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Water as needed
- Optional: sugar or jaggery for sweetness
- For tadka (tempering):
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (split black gram)
- 1-2 dried red chilies, broken into pieces
- Curry leaves (optional)
**Instructions:**
1. Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, fenugreek seeds, and asafoetida. Let them splutter and become fragrant.
2. Add chopped raw mangoes and red chilies to the pan. Saute for a minute.
3. Add salt and water (enough to cover the mango pieces). Cook covered until the mango pieces are soft and cooked through. Stir occasionally.
4. Turn off the heat and let the mixture cool down slightly.
5. Once cooled, blend the mixture into a smooth paste using a blender or food processor. Add more water if needed to get the desired consistency.
6. Taste the chutney and adjust salt and spice levels according to your preference. If you like a bit of sweetness, you can add a little sugar or jaggery at this stage and blend again.
7. Heat 1 tablespoon of oil in a small pan for tadka (tempering) over medium heat.
8. Add mustard seeds to the hot oil. When they start spluttering, add cumin seeds, fenugreek seeds, and asafoetida. Stir and let them crackle for a few seconds.
9. Add urad dal and dried red chilies to the pan. Saute until the dal turns golden brown and aromatic.
10. Optionally, add curry leaves to the tadka mixture. Be careful as they might splatter.
11. Immediately pour this tadka over the prepared raw mango chutney.
12. Mix the tadka into the chutney thoroughly.
13. Allow the flavors to meld together for a few minutes before serving.
