Ingredients for Gajar Halwa(Carrot Halwa):

-1 kg carrots, grated

- 1 cup jaggery, grated or crushed

- 1 cup milk

- 4 tablespoons ghee (clarified butter)

- 1/4 cup chopped nuts (almonds, cashews, and pistachios)

- 1/2 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 1 tablespoon raisins (optional)

Instructions for Gajar Halwa (Carrot Halwa):-

1. **Preparation for Carrot Halwa:**

   - Wash, peel, and grate the carrots.

   - Crush or grate the jaggery.

   - Heat the milk and keep it aside.

2. **Cooking the Carrots:**

   - In a heavy-bottomed pan, heat 2 tablespoons of ghee.

   - Add the grated carrots and sauté them on medium heat until they are cooked and the raw smell disappears. This might take about 10-15 minutes.

3. **Adding Milk:**

   - Once the carrots are cooked, add the hot milk to the pan.

   - Simmer and cook the carrots in the milk until the mixture thickens. Stir occasionally to avoid sticking to the bottom of the pan.

4. **Adding Jaggery:**

   - Add the grated jaggery to the carrot-milk mixture.

   - Continue cooking on low heat, stirring continuously until the jaggery melts and blends well with the carrots.

5. **Flavoring:**

   - Add cardamom powder and saffron strands (if using). Mix well.

6. **Roasting Nuts:**

   - In a separate pan, heat the remaining ghee.

   - Add chopped nuts and roast them until they turn golden brown.

7. **Combining and Garnishing:**

   - Add the roasted nuts to the carrot-jaggery mixture.

   - Optionally, add raisins for extra sweetness and texture.

8. **Final Touch:**

   - Cook the halwa for an additional 5-10 minutes until it reaches a thick, halwa consistency.

9. **Serve:**

   - Garnish with more chopped nuts on top.

   - Serve warm, and enjoy your delicious Gajar Halwa made with jaggery!

Conclusion:

This recipe provides a healthier alternative to the traditional Gajar Halwa by using jaggery instead of sugar. Adjust the quantity of jaggery according to your taste preferences.
