Rajma Masala Recipe

Here's a basic recipe to make  Rajma Masala at home:

**For cooking rajma (red kidney beans):**

- 1 cup dried rajma (red kidney beans)

- 3 cups water

- 1 teaspoon salt

**For the masala:**

- 2 tablespoons oil or ghee

- 1 teaspoon cumin seeds

- 1 large onion, finely chopped

- 2 tomatoes, finely chopped

- 2 green chilies, slit lengthwise (adjust to taste)

- 1 tablespoon ginger-garlic paste

- 1 teaspoon turmeric powder

- 1 tablespoon coriander powder

- 1 teaspoon cumin powder

- 1 teaspoon garam masala

- Salt to taste

- 1/2 cup chopped fresh coriander leaves

**Instructions:**

1. Rinse the dried rajma under cold water until the water runs clear. Soak the rajma in enough water overnight or for at least 8 hours. Drain and rinse again.

2. In a pressure cooker, add the soaked rajma along with 3 cups of water and 1 teaspoon of salt. Pressure cook for about 15-20 minutes or until the rajma is cooked through and soft. If you don't have a pressure cooker, you can also cook the rajma in a regular pot until soft, which may take longer.

3. Once the rajma is cooked, set it aside. Do not drain the water.

4. Heat oil or ghee in a separate pan or kadhai over medium heat. Add cumin seeds and let them splutter.

5. Add finely chopped onions and sauté until they turn golden brown.

6. Add ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.

7. Add finely chopped tomatoes and cook until they turn mushy and the oil starts to separate from the masala.

8. Add turmeric powder, coriander powder, cumin powder, and garam masala. Mix well and cook for another minute.

9. Add the cooked rajma along with the water it was cooked in. Stir well and simmer the gravy for about 10-15 minutes, allowing the flavors to blend together and the gravy to thicken.

10. Adjust salt according to taste.

11. Finally, garnish with chopped coriander leaves.

12. Serve hot with rice or roti.
