 Misal is a popular Maharashtrian dish made with sprouted moth beans (matki) and spices. It's typically served with pav (bread rolls) or as a standalone meal. Here's a basic recipe for Misal:


Misal Recipe

Ingredients:

- 1 cup sprouted moth beans (matki)

- 2 onions, finely chopped

- 2 tomatoes, finely chopped

- 2-3 green chilies, chopped

- 1-inch ginger, grated

- 3-4 garlic cloves, minced

- 1/2 cup chopped coriander leaves

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 2 tablespoons Misal masala (available in Indian grocery stores)

- Salt to taste

- Oil for cooking

- Water as needed

- Lemon wedges for garnish

For serving:

- Pav (bread rolls) or bread slices

- Finely chopped onions and coriander leaves

- Sev (thin fried chickpea flour noodles)

Instructions:

1. Heat some oil in a pan or pressure cooker. Add mustard seeds and cumin seeds. Let them splutter.

2. Add finely chopped onions and sauté until they turn translucent.

3. Add chopped green chilies, grated ginger, and minced garlic. Sauté for a minute.

4. Add chopped tomatoes and cook until they turn soft and mushy.

5. Add turmeric powder, Misal masala, and salt to taste. Mix well and cook for two minutes.

6. Add the sprouted moth beans (matki) and mix everything together.

7. Add enough water to cover the beans (about 2-3 cups). If using a pressure cooker, close the lid and cook for 2-3 whistles until the beans are cooked and tender. If using a pan, cover and cook until the beans are soft, stirring occasionally and adding more water if needed.

8. Check the seasoning and adjust salt and spice levels as per your taste.

9. Garnish with chopped coriander leaves and turn off the heat.

To serve:

- In a serving bowl, place a ladleful of the prepared Misal.

- Garnish with chopped onions, coriander leaves, and sev.

- Squeeze some lemon juice on top.

- Serve hot with pav or bread slices on the side.
