 Roasted Drumstick Bharta is a flavorful dish made by roasting drumsticks and then preparing a spicy and tangy bharta (mash) using them. Here’s how you can make  Roasted Drumstick Bharta:

Roasted Drumstick Bharta Recipe

**Ingredients:**

- Drumsticks (moringa), around 4-5

- Oil, 2-3 tablespoons

- Onion, finely chopped, 1 medium

- Tomatoes, chopped, 2 medium

- Green chilies, chopped, 2-3 (adjust according to taste)

- Ginger-garlic paste, 1 tablespoon

- Turmeric powder, 1/2 teaspoon

- Red chili powder, 1 teaspoon

- Coriander powder, 1 teaspoon

- Garam masala powder, 1/2 teaspoon

- Salt, to taste

- Fresh coriander leaves, chopped, for garnish

**Instructions:**

1. Preheat your oven to 400°F (200°C).

2. Wash the drumsticks thoroughly and pat them dry with a kitchen towel.

3. Rub the drumsticks with a little oil and sprinkle some salt. Place them on a baking tray  lined with parchment paper otherwise you can roast it on gas with help of jali.

4. Roast the drumsticks in the preheated oven for about 25-30 minutes or until they are cooked and tender. You can turn them halfway through for even cooking.

5. Once roasted, let the drumsticks cool slightly. Then remove the outer skin and separate the pulp from the drumsticks. Discard any fibrous parts.

6. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn translucent.

7. Add ginger-garlic paste and chopped green chilies. Sauté for a couple of minutes.

8. Add chopped tomatoes and cook until they are soft and mushy.

9. Now add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Mix well and cook the masala for a few minutes until the oil starts to separate from the masala.

10. Add the roasted drumstick pulp to the masala and mix well. Mash the mixture slightly using the back of a spoon or a potato masher to get a coarse texture.

11. Cook for a few more minutes until everything is well combined and heated through.

12. Garnish with fresh coriander leaves and serve hot with roti or rice.

This  Roasted Drumstick Bharta has a smoky flavor from roasting the drumsticks, adding depth to the dish. It’s a delightful variation of the traditional drumstick bharta and makes for a delicious and nutritious meal. Enjoy!
